Who doesn't love a loaf of banana bread?! This is a really quick and easy recipe to make if you have some over ripe bananas sat there asking to be used. The recipe is gluten-free but you can use any kind of flour you have in, also feel free to add in your favourite bits - chocolate chips, nuts, seeds etc.
Ingredients -
1 + 3/4 cup of gluten free flour, I used buckwheat
1/3 cup of sugar, I used coconut
2 heaped tsp cinnamon
2 tsp baking powder
4 large ripe bananas
1/3 cup of coconut oil
2 tsp vanilla extract
handful or raisins
buckwheat to sprinkle on top
Instructions -
Pre-heat the oven to 160 degrees C
Combine flour, sugar, cinnamon and baking powder, mix well
Add bananas, oil, vanilla, raisins and mix well
Grease a loaf tin and place mixture inside, sprinkle buckwheat on top
Bake on the middle rack for 50 minuets (aprox)
Leave to cool once out of the oven and serve
