Rainbow cookies

These cookies are soft and gooey in the middle with just the right amount of crisp crunch around the edge ... the perfect balance!


Who doesn't love cookies ... these are so simple to make and you can decorate them however you like! You can even theme them if you have an event coming up, I have popped some pictures below for inspiration! Double choc swirl cookies

Ingredients ~

  • 1 and half cups of flour, I used buckwheat

  • 1/2 cup melted coconut oil

  • 1/4 plant milk, I used almond

  • 1 cup sugar of your choice, I used coconut

  • 1 tsp vanilla extract

  • 1/2 tsp baking powder

  • 10 oreos

  • 200g vegan chocolate

  • 200g icing sugar

  • 1 tbsp melted vegan butter

  • decorations for the top

Instructions ~

  • Mix the sugar, milk and coconut oil in a large bowl, add in the vanilla extract and baking powder and mix well.

  • Break the Oreos into smaller pieces and chop the chocolate into bite sized chunks.

  • Add in the flour, Oreos and chocolate to the bowl and mix well.

  • Place in the oven at 180 degrees C for around 7-9 minuets, keep checking on them as they can burn easily.

  • Once the cookies are done allow to cool on a cooling rack before touching them, the will continue to cook even when out of the oven.

  • Whilst the cookies are cooling its time to make the icing!

  • In a new bowl pour your icing sugar in with the melted vegan butter and start to mix, slowly adding plant milk until you have a nice thick icing texture.

  • Ice the cookies when fully cooled and decorate with your choice of topping.
