Biscoff cookies

Lotus biscoff cookies, my ultimate favourite cookie to bake! Only a few ingredients, easy to make and they taste amazing! I always get requests of friends and family to bake these delicious treats :). They are 100% vegan with no compromise on the taste, I hope you enjoy making them.

Ingredients ~

  • 1/2 cup melted coconut oil

  • 1 and half cups of flour, I use buckwheat

  • 1/4 cup of plant milk

  • 1 cup of sugar, I used coconut

  • 1 tsp vanilla extract

  • 10 crushed lotus biscoff biscuits

  • 2 tbsp of bifcoff lotus spread

  • 1/2 tsp baking powder

  • dash of maple syrup

Instructions ~

  • Mix the sugar, milk and coconut oil and maple syrup in a large bowl, add in the vanilla extract and baking powder and mix well.

  • Break the lotus biscoff biscuits into smaller pieces and add in with the biscoff spread.

  • Add in the flour and mix well.

  • Place in the oven at 180 degrees C for around 7-9 minuets, keep checking on them as they can burn easily.

  • Once the cookies are done allow to cool on a cooling rack before touching them, the will continue to cook even when out of the oven.

  • Once fully cooled spread a tsp of biscoff spread on top of each cookie and decorate with anything you like!
